‘Tis The Season of Holiday Leftovers {Cheesy Potato Scrambled Eggs and Waffleninis}

Merry Christmas!

Welcome to the sixth stop of the ‘Tis The Season Link Party Series (link up below!)!  So far we’ve covered Christmas mantels, outdoor decor, Christmas crafts, recipes, and trees.   Today we’ll look at three recipes to help use up some of those common holiday leftovers.

 
Anyone ever have a pan or crock pot full of cheesy potatoes left over?
 
Why not scramble them up with some eggs for an after Christmas breakfast!

Here’s how it’s done.

1. Gather your cheesy potatoes, eggs, and milk.

2. For each person scramble 2 eggs and approximately 1/4 cup milk. 

3. Pour the stirred eggs and milk into a warmed skillet.  When the eggs are mostly cooked move them over to one side of your skillet and place a scoop of potatoes on the other half to warm.  Feel free to add a little olive oil to the potatoes if they are a bit dry.

4. When the eggs are fully cooked and the potatoes are warmed toss them together.  Transfer them to your plate and DIG IN!

Ever heard of a Wafflenini?  Probably not, because I recently made them up on a crazy whim!  I’m not a lunch person.  I usually am not that hungry and have a hard time looking in the fridge and deciding what to eat.  On an afternoon at my parents I looked in the fridge and settled on using some leftover belgian waffles, a slice of fresh mozzarella, spinach leaves, and italian seasoning to make a little panini.  It tasted AWESOME!  Let me just tell you that waffles make an absolutely fabulous “bread” for paninis.  I like to call them twice baked waffles.  Imagine a perfectly crispy waffle on the outside that still retains pockets of soft waffle on the inside. 
 
The Wafflenini was born!
 
We came up with two perfect combinations to use up those holiday leftovers and make your after holiday cooking a cinch (you can even have the waffles made ahead a time in the fridge or freezer).
 
Holiday Wafflenini Combo 1:
Ham, Sharp Vermont White Cheddar, and Blackberry Jam

 

Holiday Wafflenini Combo 2:
Turkey, Sharp Vermont White Cheddar, and Whole Berry Cranberry Sauce

 

 
I’m sure these recipes would taste just as good with any leftover cheese slices you may have on hand.  A little spinach might also be great with your turkey and cranberry wafflenini! 
 
Here’s a quick rundown on the process.  Use your favorite belgian waffle recipe and waffle maker to prepare the waffles.  Rip each waffle in half to create two pieces of panini “bread”.  Place one slice of waffle on the panini press and add blackberry jam or cranberry sauce on top.  Layer on the meat and cheese, and top with the other half of the waffle.  Close the panini press and cook until the cheese is melted.  Remove and enjoy!
